Raw Pad Thai

what you need
1 small daikon
300gr of green asparagus, thinly sliced on diagonal
1/2 green or red bell pepper
2 spring onions or scallions, shredded
100gr of spinach
1/3 of a cilantro bunch
2 tbsp olive oil
1 crushed garlic clove
2 tbsp of cider vinegar
1 lime juice and zest
2 pinches of red chill powder sea salt and pepper
when serving 1 tbsp of cashew oil
Peel the radish and create spaghettis using a mandolin or spiral maker.
Clean the asparagus and slice them very thin by using a potato peeler, or cut them in pieces.
Clean the bell pepper, remove the seeds and the stem, cut in thin slices. Slice the spring onions, diagonal. Rince and dry the spinach.
Add all the vegetables to a medium bowl, mix them well.
Top with the chopped cilantro. to prepare the sauce.
In a small bowl, stir together the olive oil, garlic clove, cider vinegar, lime juice and peel, soy sauce and the chili powder.
Add a little salt and pepper to taste. Stir well to combine. Pour over the vegetables, and toss to coat.
