A Plant Based Ceviche!

CASHEW CEVICHE
inspired by: unrefinedrd
recipe type: to lunch, to dinner, to serve on the side

plantbased, glutenfree, dairyfree, vegan, raw

what you need:
serious handful of raw cashews
+ juice of approx 1 lime
+ juice of approx 1 orange
+ juice of 1 lemon
+ ¼ red onion, finely sliced (with a mandoline)
+ 1/2 serrano pepper, de-seeded and finely chopped
+ 1 avocado, cubed🥑
+ 1/2 cup cherry tomatoes, quartered and deseeded
+ good bunch of cup fresh cilantro leaves, chopped🌱
+ 1 tablespoon extra virgin olive oil
+ pinch of sea salt

what to do:
1. Soak cashews in water for approx. 4 hours.
Drain and rinse cashews after soaking. 
2. Place them in a bowl. Add lime juice,lemon juice, orange juice, the red onion and serrano pepper to the cashews. Stir to combine and marinate in refrigerator for 1 hour.
4. After marinating, take cashews out of the refrigerator and add the avocado, tomatoes, cilantro, olive oil, and salt.  Stir to combine.
5. Garnish with cilantro and serve immediately. Add more juice of tge citrus is desired! Serve w/ sweet potato or tortilla chips..
