PISTACHIO + ROSE ROCKY ROAD
recipe inspired by: Eat This My Friend
recipe type: raw, paleo, vegan, gluten free
makes 24 squares



WHAT YOU NEED:
1 cup coconut oil
4 Tbsp raw cacao powder
6 Tbsp rice malt syrup
1/4 tsp rose water
1 cup crushed macadamias (or popcorn if you are not overly fussed about it being raw) 1/2 cup
1/2 cup shredded coconut
1/2 cup almond meal
1/2 cup shelled pistachios
1/4 cup goji berries

WHAT TO DO:
Melt the coconut oil and rice malt syrup together.
Whisk in the raw cacao powder and rose water, until smooth.
Place remaining ingredients into a mixing bowl and stir. Pour in the chocolate mixture and mix thoroughly to coat.
Line a square cake tin with baking paper and pour in the mixture. Use the palm of your hand to flatten the mixture tightly into the pan.
Place in the freezer to set, for at least 2 hours.
Cut into squares and serve!
