Pistachio + Rose Rocky Road

makes 24 squares


  • 1 cup coconut oil

  • 4 Tbsp raw cacao powder

  • 6 Tbsp rice malt syrup

  • 1/4 tsp rose water

  • 1 cup crushed macadamias (or popcorn if you are not overly fussed about it being raw) 1/2 cup

  • 1/2 cup shredded coconut

  • 1/2 cup almond meal

  • 1/2 cup shelled pistachios

  • 1/4 cup goji berries


  • Melt the coconut oil and rice malt syrup together.

  • Whisk in the raw cacao powder and rose water, until smooth.

  • Place remaining ingredients into a mixing bowl and stir. Pour in the chocolate mixture and mix thoroughly to coat.

  • Line a square cake tin with baking paper and pour in the mixture. Use the palm of your hand to flatten the mixture tightly into the pan.

  • Place in the freezer to set, for at least 2 hours.

  • Cut into squares and serve!
