to snack - coconut ice cream (vegan & dairyfree)


This coconut ice cream uses bananas as a base, making it coconut nice cream!
if you don't like bananas, play around with soaked and blended cashews or avocado!
Such easy tricks to make your favorite ice cream flavors vegan.

Coconut Ice Cream

makes: 2 servings

what you need:

  • 2 bananas, cut into chunks and frozen

  • 2 Tbsp coconut milk

  • 1 tsp vanilla extract / vanilla bean / ....

  • toasted coconut flakes

  • shredded coconut

what to do:

  • Cut the bananas into chunks and put them in the freezer for a couple of hours.

  • Remove them from the freezer, and let rest at room temperature for 1-2 minutes before you put them in a high speed blender, together with the coconut milk and vanilla extract.

  • Blend into ice cream and serve immediately.

  • ps, after blending you could whirl in toasted coconut flakes or shredded coconut if desired.
