Spicy Tomato Dressing and Hearts of Palm Salad

what you need:
3 ripe tomatoes, roughly chopped
60ml / 1/4cup lime juice
1Tbsp agave or other sweetener
4 stems of coriander
2 cloves of garlic, bruised
1/4 tsp tabasco sauce
2 Tbsp passion fruit juice or other sweet juice
1 tsp sea salt
60 ml /1/4cup olive oil
what to do
Combine all the ingedients, exept the olive oil and salt, in a bowl. Add the sea salt and leave to stand cocered for 30min. to allow the flavors to develop. Pish through a sieve into a bowl, this will make 300ml or about 1 1/4cup of juice. Gradually add in the olive oil.
For the salad combine the various tomatoes, red onion,chilli. Add 60 ml of the dressing and let stand.
When serving, toss the lettuce with the dressing. Divide the lettuce leaves over bowls, scatter the leaves with half the tomato salad. Scatter the salad with half of the spring onions, palm hearts,herbs, and continue layering.
Drizzle the salad with more dressing and serve!
