to make - sunchoke chips with apple sauce from Veranda

SUNCHOKE CHIPS WITH APPLE SAUCE
recipe inspired by restaurant Veranda, Antwerp
recipe type: to serve on th side, to dip, to lunch
cuisine: plantbased, glutenfree, vegan, dairyfree

what you need:
handful of apples
handful of sunchokes
coconut oil
sea salt
pepper

what to do:
start by pre-heating your oven.
cut some sunchokes lengtwise, drizzle with olive oil / coconut oil and let them bake at 165 untill soft.

Make the homemade apple sauce.
Clean and chop up the red apples.
Place them in a pot on low heat and cover them with water. Add in 1 or 2 teaspoons of coconut oil.  Let the apples cook until tender and soft.  Once they are soft, place them in a high speed blender and blend away making a creamy apple sauce.
Take the sunchokes out of the oven.
Scrape out a few sunchokes and add the soft sunchoke flesh to the blender together with the apple sauce

To make the sunchoke chips.
Preheat the oven.
By using a mandoline thinly slice the sunchokes. Arrange them on a baking sheet and place them in the oven. Sprinkle some coconut / olive oil on top. Add seasalt and pepper.
Once they are golden en crispy, remove them from the oven.

Now it's up to you. Or you serve the chips and dip. place a spoon of apple sunchoke sauce on each sunshoke chip. sprinkle some seasalt.
Or you could  arrange them on a  plate by adding a dollop of apple/sunchoke puree. Add the sunchoke chips and sprinkle with salt.
