to make - artichoke spread

to make - artichoke spread

this spread is so easy to make!

Artichoke spread

all you need is:
a jar or artichoke hearts (or steam them yourself and keep the leaves for another dish)
a handful of rucola
a little garlic clove
a good drizzle olive oil ( according to desired consistency)
juice of half a lemon
pepper and salt

how to do it:
place everything in the blender
and blend
adjust the lemon juice, rucola, pepper and salt and olive oil according to taste and desired consistency.
Something you want more lemon taste, other times more peppery from the rucola... change up the measurements as you please.

info:
The Artichoke is a low-calorie, nutrient-rich vegetable. According to the USDA, one medium Artichoke is an excellent source of fiber and vitamin C, and a good source of folate and magnesium. Artichokes also are a natural source of antioxidants.
