to make - babaganoush inspired by My New Roots

recipe thanks to My New Roots and Vinnies in Amsterdam as inspiration 
recipe type: to brunch, to lunch, to snack, to dinner, to serve on the side

What you need and what to do….
1 eggplant - roasted in the oven for 25min
1/2 lemon juice and zest
2 garlic cloves
3tbsp tahini
2 tsp ground cumin
pinch of cayenne
glug of olive oil
some honey or pommegranate molasses... 

what to do:
blend the eggplant ( skin and all ) with zest and juice of 1/2 lemon, 2 garlic cloves, 3tbsp tahini, 2 tsp ground cumin,pinch of cayenne,glug of olive oil and some honey or pommegranate molasses... 
Spread on bread and add avocado!!
